- In the same pan add remaining oil. Add cumin seeds. When they splutter, add chopped onion. Fry onion until brown. Add red chilli powder, turmeric powder and saute for few seconds. Next add onion paste, ginger garlic paste, cumin powder, coriander powder and salt. Saute for a couple of minutes until oil separates.
- Then add chopped tomato and cook till it is soft and mushy.
- Now add fried pointed gourds, boiled jackfruits, boiled potatoes and stir thoroughly till masala coats the veggies well.
- Pour 1/2 cup of water or as needed into the mixture. Cover and cook on a low medium flame till gravy becomes thick.
- Add garam masala powder and chopped coriander leaves. Cover and switch off the flame.
- Serve hot with rice or roti.
